Will this tree grow at high altitudes? I live at 7000 ft

The Honeycrisp apple is okay to plant at a higher elevation, it is a cold tolerant semi dwarf variety that should work in your environment.

I bought a couple Honeycrisp trees last year and one of them developed a branch that came off the trunk very low on the tree. Should this branch be trimmed off regardless since it could become a secondary trunk? I guess I could really use some guidelines for trimming.

Where the root stock is grafted is an area that has a bit of a bud swell on the tree. Any branches budding below the graft bud swell should be pruned off, those stems will not produce the Honeycrisp apple. If there are branches very low on you tree above the bud swell, it will not hurt to trim them off at the trunk of the tree to keep the lateral branching higher up on the tree.

It can take 3-5 years to produce fruit.

How far apart should semi-dwarf Honey Crisp apple trees be planted?

For proper pollination plant within 50' of another apple variety. Spacing can be as close as 8-10' apart, make sure to leave enough room for any kind of equipment to go around the trees and good air circulation.
